Assistant General Manager/Beverage Director
Over the past 20 years Greg has worked virtually every position in the restaurant/bar industry, from the front of the house to the back, always seeking to expand his knowledge and passion for food and beverage. Prior to taking his position with Forbidden Root, he served as bar manager/beverage director at Moxee Brewpub. Cuisine, along with art, have long been of great influence on Greg. Some of his earliest memories are of drawing and painting in the kitchen as his mother, Lorraine, cooked - tasting everything he could get his hands on along the way. His artistic expression and food first came together as a potter, forming platters, bowls, cups, and teapots intended for daily use in kitchens and homes. By the late 90’s this artistic streak led to a B.A. in Film and Video from Columbia College Chicago with a concentration in experimental and documentary filmmaking. Greg has since turned his creative expression toward libation, brewing beer and handcrafting tinctures, bitters, and syrups, for use in original and classic cocktails.
